Oven Fried Catfish

Ingredients

  • 1 C yellow cornmeal
  • 2 tsp Creole style seasoning, such as Old Bay
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 2 eggs
  • 1 Tbsp hot sauce
  • 1 1/2 Lb catfish fillets
  • 1 recipe String Beans

Directions

Mise en Place

  • Preheat the oven to 425 degrees F
  • Coat a baking sheet with cooking spray.
  • Measure out all ingredients

Prepare the Breading

  • In a bowl, combine the cornmeal, Creole seasoning, paprika, and pepper.
  • In another bowl, mix eggs and hot sauce.

Prepare the Fillets

  • Coat the fillets in the egg mixture.
  • Immediately cover in the breading mixture, coating evenly
  • Place each breaded fillet onto the prepared baking sheet

Bake the Fillets

  • Place the baking sheet with fillets into the oven
  • Bake for 15 minutes, or until golden brown, turning midway through

Serve

  • Season with salt to taste.
  • Serve immediately with a side of string beans.
  • Enjoy!
