Whole Wheat Pretzel


  • 1 egg, beaten + 2 Tbsp water
  • 1 package active dry yeast
  • 1 Tbsp honey
  • 1 1/3 C water, 115 degrees F
  • 1 1/2 C whole wheat flour, more if needed
  • 1 1/2 C all-purpose flour
  • 1 1/2 tsp salt
  • 3 Tbsp olive oil
  • nonstick cooking spray
  • sesame seeds, for garnish
  • Dijon Mustard, for dipping


Mise en Place

  • Measure out all ingredients
  • Preheat oven to 400 F
  • Crack 1 egg into a bowl, add 2 Tbsp water and beat
  • Mix the yeast, honey and warm water in a bowl. Let sit for 5 minutes until it gets foamy

Prepare the Dough

  • Mix the flours and salt together in a large bowl
  • Mix in the oil and yeast mixture. Continue mixing until the dough forms
  • Knead the dough in the bowl or turn the dough onto a lightly floured surface for about 5 minutes or until smooth and elastic. Take care not to over knead the dough
  • Lightly drizzle with oil and cover for 30 minutes. Let it rest in a warm place

Prepare the Pretzels

  • Place parchment paper on a sheet tray and coat with cooking spray
  • Punch down the dough and divide into 6 equal parts
  • Roll each part into rope, about 18 inches long
  • Twist each rope into a pretzel shape on a cookie sheet
  • Brush pretzels with egg mixture and sprinkle with coarse salt or sesame seeds.


  • Bake about 15 minutes or until pretzels are golden brown and crust is crisp.
  • Immediately remove from cookie sheet to wire rack.


  • Serve warm with mustard and enjoy!
