Preheat oven to 400°F.
Mix the yeast, honey, and warm water in a bowl. Let sit for 5 minutes until it gets foamy.
Mix the flours and salt together in a large bowl. Using the large bowl, mix in the oil and yeast mixture. Continue mixing until the dough forms.
Knead the dough in the bowl or turn the dough onto a lightly floured surface for about 5 minutes or until smooth and elastic.
Lightly drizzle with oil and cover for 30 minutes. Let it rest in a warm place.
Place parchment paper on a sheet tray and coat it with cooking spray.
Punch down the dough; divide it into 6 equal parts.
Roll each part into a rope, about 18 inches long. Twist each rope into a pretzel shape on a cookie sheet.
Mix the egg and water together. Brush pretzels with egg mixture; sprinkle with coarse salt or sesame seeds.
Bake for about 15 minutes or until pretzels are golden brown and the crust is crisp. Immediately remove from cookie sheet to wire rack. Serve warm with mustard.
