Turkey Picadillo Taco Filling

Ingredients

  • 1/2 onion
  • 1/4 C cilantro
  • 1 clove garlic
  • 1/2 jalapeño, seeded
  • 3 ripe tomato
  • 1-2 avocado
  • 1/4 head romaine heart
  • 2 Tbsp olive oil
  • 1 1/2 Tbsp chili powder
  • 1 tsp cumin, ground
  • salt and pepper to taste
  • 3/4 C canned diced tomatoes
  • 3/4 Lb ground turkey
  • 1/3 C chicken broth
  • 12 whole wheat tortillas, or corn tortillas
  • 1 C cheddar cheese, shredded

Directions

Mise en Place

  • Chop the onion and cilantro
  • Peel the garlic. Mince the garlic and jalapeño
  • Dice the tomato and avocado
  • Thinly slice the romaine
  • Heat a medium skillet over medium heat

Cook the Filling

  • Add oil to the heated skillet
  • Add onions, garlic, jalapeno, chili powder, and cumin.
  • Season with salt and pepper and cook, stirring occasionally until tender, about 10 minutes.
  • Add the canned tomatoes and simmer to thicken, about 2 minutes
  • Stir in the turkey and chicken broth
  • Continue simmering until the turkey is cooked through and the mixture thickens, about 12 minutes
  • Stir in cilantro

Assemble the Tacos

  • Top a tortilla with turkey picadillo mixture
  • Add lettuce, tomatoes, and avocado
  • Garnish with shredded cheese

  • Serve and enjoy!
