Tempero Baiano Veggies

Ingredients

  • 1 small zucchini, medium diced
  • 1 bell pepper, medium diced
  • 1/2 red onion, brunoised
  • 1 cup tomatoes, medium diced
  • 1 can corn, drained and rinsed
  • 1 tablespoon olive oil

Tempero Baiano Spice Mixture:

  • 1 tablespoon fresh oregano, minced
  • 1 tablespoon ground cumin
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon ground paprika
  • 1/2 tablespoon crushed red pepper flakes

Directions

Mix all of the Tempero Baiano spices.

Heat oil in pan over medium heat and sauté onions until translucent.

Add in zucchini, corn, and bell pepper and sauté until soft. Add in tomatoes and spice mixture and let simmer for 2-3 minutes.

Serve warm and enjoy!
