Ingredients

  • 1/4 cup cooked quinoa, cooled
  • 1 bunch fresh parsley, minced
  • 1/2 bunch fresh mint, minced
  • 1/2 cucumber, small diced
  • 2 tomatoes, small diced
  • 1/4 white onion, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice

Directions

Combine the herbs, cucumber, tomatoes, onion, salt, pepper, and quinoa in a mixing bowl.

In a separate bowl, whisk the lemon juice and olive oil together.

Once combined, drizzle over the salad, toss, and serve!
