Spanish Lentils

Ingredients

  • 2 cloves garlic
  • 1 + 1/2 cups lentils
  • 1/4 onion
  • 2 tsp olive oil
  • 3 C chicken broth, (or vegetable broth), low sodium
  • 1 bay leaf

Directions

Mise en place

  • Peel and smash garlic.
  • Rinse lentils.
  • Dice the onion.
  • Measure out the ingredients.

Prepare

  • Heat the oil in a small saucepan over medium heat.
  • Add onions and saute.
  • Add lentils and immediately cover with broth.
  • Add bay leaf and garlic and bring to a boil. Once boiling,reduce to a simmer and cook, uncovered for 20-30 minutes until liquid is absorbed, and lentils are soft. Add water as needed.
  • Remove the garlic and bay leaves.

Serve

  • Serve and enjoy!
