Roasted Corn

Ingredients

  • 1 (14 ounce) can corn, drained and rinsed
  • 2 limes, cut into wedges
  • 1/2 bunch cilantro, chopped
  • 1 tablespoon olive oil
  • 1/2 tablespoon paprika
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Directions

Preheat oven to 400°F.

In a medium bowl, add oil, paprika, chili powder, salt, and pepper. Mix until well combined.

Mix in the corn.

Bake for 10-12 minutes or until the corn begins to caramelize.

Garnish with cilantro.

Serve with lime wedges and enjoy!
