Rice and Lentils (Mujaddara)

Ingredients

  • 1 red onion, peeled and small diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 cup brown rice
  • 1/2 cup lentils
  • 2 cups water
  • Salt and pepper to taste
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt

Directions

Heat oil in a saucepan over medium heat.

Add onion and garlic and sauté until lightly browned.

Stir in rice and lentils.

Add water and all seasonings.

Stir and bring to a simmer. Cover and cook for 35 minutes.

Remove from heat and let stand, covered, for 10 minutes.

Fluff with a fork and serve warm!
