Pumpkin Pie Bites

Ingredients

  • 1/2 cup dates, pitted
  • 1/4 cup hot water (plus more if needed)
  • 1/2 cup pumpkin puree
  • 1 teaspoon maple syrup
  • 1 cup oats
  • 1 teaspoon pumpkin pie spice

Directions

Add hot water 1 tablespoon at a time and dates into a blender on the pulse setting until paste texture is achieved.

In a separate bowl, mix pumpkin puree and add syrup.

Add the date paste to the pumpkin mixture and combine.

Add all oats and pumpkin pie spice. Mix until combined.

Roll the mixture into golf ball sized bites.

  • If desired, roll bites in your favorite topping. (nuts, seeds, dried fruit, etc.)

Refrigerate your bites for 30 minutes for a more firm texture before serving.

Serve with a side of Greek yogurt and enjoy!
