Peach Corn Salsa

Ingredients

  • 1/4 cup peaches, diced
  • 1/4 cup tomato, diced
  • 2 tablespoons red onion, diced
  • 2 tablespoons cilantro, chopped
  • 1/4 cup corn, frozen and defrosted or cut off the cobb
  • 1/2 lime, juiced (about 1-2 teaspoons)
  • 8 whole wheat tortilla chips

Directions

In a large bowl, add peaches, tomatoes, onions, cilantro, and corn.

Mix until well combined.

Squeeze the juice from the lime over the bowl and toss until well coated.

Serve with whole wheat tortilla chips and enjoy.
