Oven Fried Catfish

Ingredients

  • 1 cup yellow cornmeal
  • 2 teaspoons Creole style seasoning, such as Old Bay
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 2 eggs
  • 1 tablespoon hot sauce
  • 1 1/2 pound catfish fillets

Directions

Preheat the oven to 425°F.

Coat a baking sheet with cooking spray.

In a bowl, combine the cornmeal, Creole seasoning, paprika, and pepper.

In another bowl, mix eggs and hot sauce.

Coat the fillets in the egg mixture. Immediately cover with the breading mixture, coating evenly.

Place each breaded fillet onto the prepared baking sheet.

Place the baking sheet with fillets into the oven.

Bake for 15 minutes, or until golden brown, turning midway through.

Season with salt to taste.

Serve immediately with Common Threads Garlicky Green Beans.
