Ingredients

Ingredients for Toasted Bread

  • 1/2 tsp sumac
  • 3 tsp olive oil
  • 1 loaf whole wheat pita bread

Ingredients for Dressing

  • 2 Tbsp pomegranate molasses
  • 1 tsp sumac
  • 1 lime
  • pepper to taste
  • salt to taste
  • 1/3 C olive oil

Ingredients for Salad

  • 1 romaine heart
  • 5 tomato
  • 5 scallion
  • 5 radish
  • 2 C parsley
  • 1 C mint
  • 1 English cucumber

Directions

Mise En Place

  • Preheat the oven to 350 F.
  • Measure out all ingredients.
  • Wash and dry fresh produce.
  • Chop romaine heart, tomatoes, radishes, parsley, mint, and cucumber.

Preparation

  • Cut the pita bread into small pieces. Mix with 3 tsp olive oil and ½ tsp sumac. Place into the oven until the pieces are toasted and browned.
  • In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, scallions with the sliced radish and parsley. Mix in the toasted bread.
  • Make the dressing by mixing the olive oil, sumac, lime, pomegranate molasses and salt and pepper to taste.

Serve and enjoy!

  • Drizzle the dressing over the salad and enjoy!
