Lahmacun Salad Topping

Ingredients

  • 1 cucumber, cut into 1/4 inch dice
  • 1/2 cup cherry tomatoes, quartered
  • 10 radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup parsley, roughly chopped
  • 3 teaspoons lemon juice
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

To make the salad, mix together the vegetables and parsley and dress with the dressing. Stir gently and set aside.

Serve with Lahmacun (Turkish Pizza) and enjoy!
