Herb Roasted Turkey Breast

Ingredients

  • 1 onion, peeled and diced
  • 3 carrots, peeled and diced
  • 2 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 1 teaspoon salt, adjust to taste
  • 1 teaspoon pepper, adjust to taste
  • 3 tablespoons canola oil
  • 3 pounds turkey breast, skin-on

Directions

Preheat the oven to 350°F.

In a small bowl add paprika, thyme, rosemary, sage, salt, pepper, and oil. Mix until well combined.

Place turkey breast in the roasting pan.

Add the onions and carrots.

Rub the turkey breast, both on top of the skin and under, with the seasoning.

Cover the turkey and roast for around 1 hour and 15 minutes, or until the meat thermometer inserted in the thick part of the meat reads 165°F.

Uncover the turkey and Increase oven temperature to 450°F.

Roast the turkey for an additional 10 minutes until the skin is crisp and golden.

Remove and place on a carving board to rest for 10 minutes.

Carve and serve.
