Ingredients

  • 1/2 tsp ground nutmeg
  • 1/2 tsp of ground cloves
  • 1 tsp of ground cinnamon
  • 1 Tbsp ground cumin
  • 1 1/2 tsp ground pepper
  • 1 1/2 tsp ground cardamom
  • 1 1/2 tsp ground coriander

Directions

Mise En Place

  • Measure out all spices.

Prepare the Recipe

  • If using whole spices: Combine all ingredients in the grinder, then pulse for 5 seconds at a time until all ingredients are ground up.
  • If using ground spices: Measure all ground ingredients into a bag or small Tupperware and shake to combine.
  • Use in the Chicken Saag. It is also good for marinades.

Chef’s Tip:

  • If using whole spices, substitute the following whole seeds for ground: 6 cardamom pods, 1 inch cinnamon stick, 3 whole cloves, 1/4 whole nutmeg. For remaining ingredients use the same amount of whole seed as ground.
