Frijoles Paisas

Ingredients

  • 2, 14-oz cans Pinto Beans
  • 1 C carrots
  • 1/4 C scallion
  • 1 garlic clove
  • 1/4 C cilantro
  • 3 Tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1,14-oz can canned diced tomatoes

Directions

Mise En Place

  • Drain and rinse the Pinto beans.
  • Peel and shred the carrots. Slice the scallions, garlic, and cilantro.
  • Measure out ingredients.

Prepare Recipe

  • In a large skillet, heat the olive oil over medium heat, and add scallions, carrots, salt, garlic, cilantro and ground cumin. Cook until fragrant.
  • Add the beans and tomatoes. Simmer until thick. Season to taste.

  • Serve and enjoy!
