Frijoles Paisas

Ingredients

  • 2 cans (14 ounce) pinto beans, drained and rinsed
  • 1 cup carrots, shredded
  • 1/4 cup scallion, chopped
  • 1 garlic clove. minced
  • 1/4 cup cilantro, chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 can (14 ounce) diced tomatoes

Directions

In a large skillet, heat the olive oil over medium heat, and add scallions, carrots, salt, garlic, cilantro and ground cumin. Cook until fragrant.

Add the beans and tomatoes. Simmer until thick.

Season to taste.

Serve and enjoy!
