Curried Potatoes

Ingredients

  • 1/4 cup olive oil
  • 1 small onion, diced
  • 2 russet potatoes, scrubbed and diced
  • 3/4 cup chicken broth
  • 1/2 tablespoon curry powder
  • 1 lemon, juiced (about 2 tablespoons)

Directions

Boil the potatoes in a medium saucepan until they are soft. Drain off the hot water.

Add olive oil on medium heat in a frying pan or skillet.

Cook the onion in olive oil until they turn soft and translucent.

Add the potatoes to the frying pan.

Add the broth, curry powder, and lemon juice.

Cook until the potatoes have absorbed the broth.

Serve warm and enjoy!
