Heat oven to 250°F.
Combine all ingredients, except yogurt and dried cranberries, in a large bowl. Mix well.
Spread granola evenly over a large cookie sheet.
Bake for 1 hour and 15 minutes, or until very fragrant and golden brown. Stir every 20-30 minutes for even browning. Remove from oven and let cool.
Add dried cranberries to granola mixture, toss evenly.
Layer Greek yogurt and granola in parfait cups.
