Chickpea Kale Salad

Ingredients

  • 1 can (15 ounce) chickpeas, drained and rinsed
  • 3-4 kale leaves, chopped into strips
  • 2 tablespoons fresh parsley, chop
  • 1 garlic clove, minced
  • 1 lemon, juiced (about 2 tablespoons)
  • 2 tablespoons olive oil
  • 2 tablespoons Parmesan cheese
  • Salt and pepper to taste

Directions

In a bowl, combine chickpeas, kale, parsley, olive oil, and garlic. Squeeze in lemon juice.

Add grated cheese, salt and pepper to taste.

Toss all ingredients together and mix well. Cover bowl and refrigerate.

Garnish with grated cheese and serve chilled or at room temperature.
