Chia Seed Jam Crostinis

Ingredients

  • 12 whole wheat crackers (sub whole grain rye bread or whole grain baguette, toasted)
  • 2 ounces goat cheese (can sub low-fat cream cheese)
  • 1/2 cup frozen blueberries
  • 1/2 tablespoon water
  • 1/2 tablespoon chia seeds
  • 1/2 teaspoon honey (plus more for topping)

Directions

Set a medium saucepan over medium heat and add blueberries, honey, and water.

Heat blueberries, stirring occasionally until they begin to liquefy, about 10 minutes.

Allow the blueberries to come to a boil, and continue to boil until it begins to break down and form a saucy consistency, about five minutes. If necessary, carefully mash the fruit with a fork or masher until it reaches the consistency you’d like.

Stir in the chia seeds and let cook for another minute. Stir again, remove from the heat, and let sit until thick (about 10 minutes). If the jam seems thin, add another teaspoon or two of chia seeds, stir, and let sit for another 10 minutes (keep in mind the jam will continue to thicken as it cools).

Cut goat cheese into 12 slices and place on top of whole wheat crackers.

Top with blueberry chia seed jam and a little bit of honey.
