Cauliflower Ceviche

Ingredients

  • 3 C cauliflower, finely diced, or pulsed in food processor
  • 1 C tomato, diced
  • 1 C cucumber, diced
  • 1/4 C onion, diced
  • 1 large jalapeño, diced, optional to remove seeds
  • 2 Tbsp cilantro
  • 1/4 C lime, juiced

Directions

Mise en place

  • Dice cauliflower, tomato, cucumber, onion, and jalapeno.
  • Chop cilantro.
  • Cut a lime and juice it.

Prepare

  • Add the ingredients to a bowl and mix well.
  • Add lime juice and cilantro.
  • Ideal to let marinate for at least 30 minutes before serving.

Serve and enjoy!
