Cauliflower Ceviche

Ingredients

  • 3 cup cauliflower, finely diced
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • 1/4 cup onion, diced
  • 1 large jalapeño, diced
  • 2 tablespoons cilantro, chopped
  • 1/4 lime, juiced (about 1 teaspoon)

Directions

Add the ingredients to a bowl and mix well.

Add lime juice and cilantro.

Ideal to let marinate for at least 30 minutes before serving.

Serve and enjoy!
