Ingredients

  • 1/2 can whole kernel corn, drained and rinsed
  • 3/4 cup canned black beans, drained and rinsed
  • 1/2 medium red bell pepper, diced
  • 1/4 cup red onion, minced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, torn
  • Salt and Pepper to taste
  • Whole wheat tortilla chips

Directions

In a bowl, mix together the black beans, corn, chopped bell pepper, chopped onion, minced garlic, lime juice, cilantro, salt, and pepper.

Taste and adjust seasonings, if desired. Enjoy!
