Fish Tacos

Ingredients

For Marinade:

  • 2 garlic cloves, mince
  • 1/2 -1 lime, zest and juice (about 1 tablespoon)
  • 1 teaspoon paprika
  • 1/2 teaspoon chili pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For Tacos:

  • 3 white fish filets such as tilapia (other options: cod, whitefish)
  • Salt and pepper, to taste
  • 8 6-inch whole grain or corn tortillas

Directions

Preheat the oven to 450°F.

Line a sheet tray with foil or parchment paper and set aside.

Mix together garlic, lime juice, lime zest, and all spices and seasonings.

Put the fish into a bowl. Use half of the marinade to coat the fish. Allow fish to marinate for 30 minutes. Save other half of the marinade for the slaw recipe.

Take the fish out of the bowl and place it onto the lined sheet tray. Bake in the oven for about 10-12 minutes or until the fish is golden brown and flakes when tested with a fork.

Once the fish is finished, serve in a whole grain or corn tortilla with Spanish Brown Rice and Coleslaw.
