Turkey Picadillo Taco Filling

Ingredients

Taco Filling

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloved garlic, minced
  • 1/2 jalapeño pepper, seeded and minced
  • 1 1/2 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 3/4 cup canned diced tomatoes
  • 3/4 pound ground turkey
  • 1/3 cup chicken broth
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Taco Toppings

  • 1/4 head romaine lettuce, thinly sliced
  • 3 ripe tomatoes, cored and diced
  • 1 to 2 avocados, diced
  • 1 cup cheddar cheese, shredded
  • 12 corn or whole wheat tortillas (6 inch)

Directions

Heat a medium-sized skillet over medium heat.

Add the oil, onions, garlic, jalapeño, and spices. Season with salt and pepper. Cook, stirring occasionally until tender, about 10 minutes.

Add the tomatoes and simmer to thicken for about 2 minutes. Stir in the turkey and chicken broth. Continue simmering until the turkey is cooked through and the mixture thickens for about 12 minutes.

Stir in cilantro and adjust seasonings.

To assemble a taco, top a tortilla with shredded lettuce, tomatoes, turkey picadillo mixture, and avocados. Garnish with shredded cheese.
