Roasted Potatoes

Ingredients

  • 1 pound small red potatoes, quartered
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried leaf thyme
  • 2 tablespoons cilantro, chopped

Directions

Preheat oven to 400°F.

Toss the potatoes with the garlic, olive oil, salt, pepper, and thyme. Make sure they are well-coated.

Arrange the potatoes in a single layer on a cookie sheet lined with foil.

Bake, turning occasionally for 25 to 30 minutes or until brown and tender.

Scoop into a serving dish and toss with the chopped cilantro.
