Crust-Less Spinach Pie

Ingredients

  • 2 tablespoons olive oil
  • 2 eggs
  • 1/2 cup whole wheat flour
  • 1/2 cup low-fat milk
  • 2 cloves garlic, minced
  • 1/2 teaspoon baking powder
  • 4 ounces shredded mozzarella cheese
  • 2 cup spinach, washed and chopped

Directions

Preheat the oven to 350°F.

Add olive oil to an 8 inch baking pan.

Beat eggs well. Add flour, milk, garlic and baking powder.

Pour into a baking pan. Top with cheese and spinach.

Bake for 30-35 minutes or until firm and the cheese is slightly golden brown.

Serve warm and enjoy!
