Cranberry Apple Spinach Salad

Ingredients

  • 5 cups spinach, fresh
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 2 apples, cored and diced
  • 1/4 cup dried cranberries
  • Salt and Pepper, to taste
  • 4 ounces goat cheese, crumbled, optional
  • 1/4 cup walnuts, chopped, roasted, optional

Directions

Make the dressing by combine olive oil, balsamic vinegar, garlic, salt, and pepper in a bowl and whisking together

Top spinach with cranberries, goat cheese and walnuts (if using).

Serve and enjoy!
