Ingredients

  • 2 tablespoons olive oil
  • 1 cup onions, chopped
  • 1 sweet potato, peeled and small diced
  • 2 teaspoons garlic, minced
  • 1 serrano, seeded and minced
  • 1 teaspoon fresh thyme. minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup coconut milk
  • 3 cups water
  • 16 ounces fresh spinach, stemmed and chopped

Directions

In a large sauté pan, heat the oil over medium-high heat. Add the onions and cook until fragrant. Add the sweet potato, garlic, peppers, thyme, salt, and pepper. Stir for 30 seconds.

Add the coconut milk and the water. Cook, stirring until the sweet potatoes are tender and the liquid is slightly reduced, about 10 minutes.

Add the greens and stir until wilted. Remove from the heat and adjust the seasonings as needed.
