Antipasto Salad

Ingredients

  • 1 head of lettuce, washed and chopped
  • 1 cup broccoli, cut into florets
  • 2 plum tomatoes, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, diced
  • 2 teaspoon kalamata olives, sliced (optional)
  • 1 cup kidney beans, drained and rinsed
  • Balsamic dressing, see Common Threads recipe

Directions

In a large bowl combine the broccoli, lettuce, beans, tomatoes, bell peppers, onion, and olives.

Pour 1/4 cup balsamic dressing over the salad and toss.

Serve and Enjoy!
