Ingredients

Skewers

  • 1 red bell pepper
  • 1 pound boneless skinless chicken breast
  • 8 ounces white button mushrooms
  • 1/2 pound cherry tomatoes

Marinade

  • 2 cloves garlic
  • 1 teaspoon crushed red pepper flakes
  • 1/2 cup balsamic vinegar
  • 1 teaspoon cumin
  • 1 teaspoon salt

Directions

Preheat the oven to 400°F.

Place the marinade ingredients in a bowl and mix.

Add the chicken cubes and coat the chicken with the marinade. Pour into a resealable plastic bag and place in the refrigerator. The chicken should marinate for at least 15 minutes or up to 8 hours.

Drain the chicken. Take one wooden skewer and insert one piece of chicken. Then, add a piece each of mushroom, pepper, and cherry tomato. Repeat one more time starting with the chicken and ending with the tomato.

Place the skewers on a cookie sheet lined with foil. Bake in the oven for 15 to 17 minutes or until the chicken is no longer pink in the middle.
