Mini Turkey Meatloaves

Ingredients

  • nonstick cooking spray
  • 2 carrots, peeled and shredded
  • 1/2 bag frozen onion and bell pepper mix, thawed and finely diced
  • 1 large egg, cracked in a small bowl
  • 3 tablespoons tomato paste
  • 1/4 teaspoon hot sauce
  • 1 teaspoon water
  • 3 tablespoons whole wheat bread crumbs
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 pound ground turkey

Directions

Preheat oven to 350°F.

Prepare a muffin tin with nonstick cooking spray.

In a small bowl, combine 1 teaspoon tomato paste, hot sauce, and 1 teaspoon water.

In a large bowl, combine carrots and onion bell pepper mix, breadcrumbs, egg, 2 tablespoons tomato paste, salt, pepper, and ground turkey.

Spoon about 1/3 cup meat mixture into each of the muffin cups.

Brush tomato paste mixture over meatloaf tops.

Place muffin tin on a baking sheet and into the oven.

Bake for 30 minutes or until an internal thermometer registers 165°F.
