Turkey Mini Meatloaves

Ingredients

  • nonstick cooking spray
  • 2 carrots
  • 1/2 bag frozen onion and bell pepper mix
  • 3 Tbsp tomato paste
  • 1/4 tsp hot sauce
  • 1 tsp water
  • 3 Tbsp whole wheat bread crumbs
  • 1 large egg
  • 2 tsp salt
  • 1/8 tsp pepper
  • 1 Lb ground turkey

Directions

Mise en Place

  • Preheat oven to 350°F
  • Prepare 8 muffin tin with nonstick cooking spray
  • Peel and shred carrots
  • Finely dice thawed onion and bell pepper mix
  • In a small bowl, combine 1 Tbsp tomato paste, hot pepper sauce, and 1 tsp water

Prepare the Meatloaf

  • In a large bowl, combine carrots and onion bell pepper mix, breadcrumbs, egg, 2 T tomato paste, salt, pepper, and ground turkey
  • Spoon about 1/3 C meat mixture into each of the muffin cups
  • Brush tomato paste mixture over meatloaf tops

Bake

  • Place muffin tin on a baking sheet
  • Bake at 350°F for 30 minutes or until a thermometer registers 165°F

Serve

  • Serve and enjoy!
