Sweet Potato Pie Bars

Ingredients

Ingredients for filling:

  • 3 lb sweet potato
  • 5 eggs, yolks only
  • 1 1/4 C nonfat plain yogurt
  • 3/4 C brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • Salt to taste

Ingredients for crust:

  • 2 Egg Whites
  • 1/2 tsp cinnamon
  • 1/4 C sugar
  • 1 C oats
  • 1 C whole wheat flour
  • 1/2 C Canola Oil

Ingredients for topping:

  • 1 C pecans, chopped, toasted
  • 1 Tbsp Maple Syrup

Directions

Mise en Place

  • Preheat oven to 350 degrees F
  • Grease a 13×9 pan and set aside.
  • Wash and dry sweet potatoes. Peel.
  • Separate yolks from whites and set aside.
  • Chop pecans, and toast in a skillet over medium heat until browned.
  • Measure out all ingredients

Prepare Sweet Potatoes

  • Bring a large pot of water to a boil.
  • Add potatoes to the boiling water and cook until they are fork tender.
  • Remove from heat and drain. Allow to cool.
  • Once cooled, scoop out the orange flesh, place in a medium bowl and mash.

Prepare Crust

  • In a food processor, add cinnamon, sugar, oats, and flour.
  • Pulse until oats are ground. Remove and place in a medium bowl.
  • In the middle of the dry ingredients, create a well.
  • Add egg whites and oil.
  • Mix until ingredients are well combined.
  • Press crust mixture into prepared pan and bake for 10 minutes.

Create Filling

  • Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment.
  • Add yogurt, brown sugar, cinnamon, nutmeg, egg yolks, and salt.
  • Beat until well combined..

Bake Pie Bars

  • Pour this batter into the baked crust.
  • Pour this batter into the baked crust.
  • Sprinkle pecans on top and drizzle with maple syrup.
  • Bake for 50-55 minutes or until the filling reaches 165-180 degrees F.
  • Remove from oven and cool.

Serve

  • Slice into bars.
  • Serve and enjoy!
  • Keep refrigerated.
