Roasted Salmon with Citrus

Ingredients

  • 1 spray cooking spray
  • 2 lemons, 1 juiced (about 2 tablespoons) and 1 sliced
  • 2 tablespoons olive oil
  • 4 salmon fillets
  • Salt and pepper to taste
  • Fresh thyme, or dill, basil, parsley, (optional)

Directions

Preheat oven to 425°F.

In a small bowl combine lemon juice and olive oil. Mix well.

Place 4 salmon fillets, skin side down, on prepared baking tray and season with salt and pepper.

Take oil/lemon mixture and spread evenly on top.

  • Optional – sprinkle freshly chopped herbs on top of the fillets.

Place salmon in oven and roast for 10-12 minutes, or until cooked in center at thickest part- about 145°F.

Cover the baking sheet with aluminum foil and allow to rest for 10 minutes before serving.

Remove salmon from skin with spatula before serving.

Garnish with lemon.
