Mise en Place
- Peel and mince garlic
- Cube eggplant and zucchini into 1” cubes
- Halve cherry tomatoes
- Measure spices and olive oil
Cook Onions & Peppers
- Add olive oil to a large saute pan over medium heat.
- Add the onion & peppers, cook, stirring, until soft and fragrant, onions are translucent.
Add Eggplant & Zucchini
- Add cubed eggplant and zucchini stirring occasionally, until soft, about 15 minutes.
Add Tomatoes, Garlic, and Spices
- Add tomatoes, minced garlic, oregano, and coriander, stirring until soft.
Season with salt and pepper to taste and serve!
