1 lb. lean ground beef, 90% lean, or ground turkey
1 tsp dried parsley
1/4 tsp pepper
1 small onion
14 oz. can crushed tomatoes
2 whole wheat English muffins
Mise En Place
Preheat oven to 425°F.
Measure out all ingredients.
Finely chop onion.
Peel and mince garlic. Line baking tray with aluminum foil.
In a medium pot, bring crushed tomatoes to a simmer. Cook pasta according to package directions.
In a medium bowl, mix the meatball ingredients together and shape into balls(about 24 meatballs).
Arrange meatballs on prepared baking sheet. Bake for 12-15 minutes or until cooked through (it should read 160°F for ground beef and 165°F for ground turkey). Add cooked meatballs to the warmed tomatoes.
