Ingredients

  • 3/4 cup quinoa, cooked
  • 1 cucumber, peeled and diced
  • 1/2 small red onion, diced
  • 1 large tomato, diced
  • 1/2 bunch parsley leaves, chopped
  • 1 bunch mint leaves, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 lemon, juiced
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

Combine all vegetables and herbs in a large bowl.

Add the cooled quinoa to the vegetables and drizzle with olive oil, vinegar, lemon juice, salt and pepper.

Toss lightly.

Serve chilled.
