Ingredients 1 clove garlic 1 lime, to juice Black pepper and salt, to taste 3 tilapia, cod or whitefish 1/2 recipe Taco Marinade, Common Threads recipe 6, 6-inch whole wheat tortilla (or corn) 1 recipe Spanish Brown Rice, see Common Threads recipe 1 recipe Coleslaw, see Common Threads recipe Directions
Mise en Place
Preheat the oven to 450°F. Mince the garlic. Squeeze lime to juice Mix together with the lime juice, lime zest, and all spices and seasonings.
Marinade the Fish
Put the fish into a bowl. Use half of the Taco Marinade to coat the fish. Allow fish to marinate for a half hour. Save the other half of the marinade for Slaw Recipe. DO NOT USE ANY MARINADE THAT HAS TOUCHED THE FISH.
Bake the Fish
Take the fish out of the bowl and place onto the lined sheet tray. Bake in the oven for about 10-12 minutes or until the fish is golden brown and flakes when tested with a fork.
Once the fish is finished, serve in whole grain or corn tortilla with Spanish Brown Rice and Slaw. Serve and enjoy! For a variation on Fish Tacos, see video by Chef Richard Ingraham.
