Baked Fish Tacos

Ingredients

  • 1 clove garlic
  • 1 lime, to juice
  • Black pepper and salt, to taste
  • 3 tilapia, cod or whitefish
  • 1/2 recipe Taco Marinade, Common Threads recipe
  • 6, 6-inch whole wheat tortilla (or corn)
  • 1 recipe Spanish Brown Rice, see Common Threads recipe
  • 1 recipe Coleslaw, see Common Threads recipe

Directions

Mise en Place

  • Preheat the oven to 450°F.
  • Mince the garlic.
  • Squeeze lime to juice
  • Mix together with the lime juice, lime zest, and all spices and seasonings.

Marinade the Fish

  • Put the fish into a bowl. Use half of the Taco Marinade to coat the fish.
  • Allow fish to marinate for a half hour.
  • Save the other half of the marinade for Slaw Recipe.
  • DO NOT USE ANY MARINADE THAT HAS TOUCHED THE FISH.

Bake the Fish

  • Take the fish out of the bowl and place onto the lined sheet tray.
  • Bake in the oven for about 10-12 minutes or until the fish is golden brown and flakes when tested with a fork.

Serve

  • Once the fish is finished, serve in whole grain or corn tortilla with Spanish Brown Rice and Slaw.
  • Serve and enjoy!
