Preheat oven to 350°F.
Grease a 13×9 pan and set aside.
Bring a large pot of water to a boil.
Add potatoes to the boiling water and cook until they are fork tender. Remove from heat and drain. Allow to cool.
Once cooled, scoop out the orange flesh, place in a medium bowl and mash.
In a food processor, add cinnamon, sugar, oats, and flour.
Pulse until oats are ground. Remove and place in a medium bowl.
In the middle of the dry ingredients, create a well. Add egg whites and oil. Mix until ingredients are well combined.
Press crust mixture into prepared pan and bake for 10 minutes.
Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment.
Add yogurt, brown sugar, cinnamon, nutmeg, egg yolks, and salt. Beat until well combined.
Pour this batter into the baked crust.
Sprinkle pecans on top and drizzle with maple syrup.
Bake for about 50-55 minutes.
Remove from oven and cool.
Slice into bars.
Serve and enjoy.
