Meatballs on English Muffin

Ingredients

  • 3 cloves garlic, minced
  • 1 small onion, finely chop
  • 1 (14 ounce) can crushed tomatoes
  • 1 pound lean ground beef, 90% lean, or ground turkey
  • 1 egg
  • 1 teaspoon dried parsley
  • 1/4 teaspoon pepper
  • 2 whole wheat English muffins

Directions

Preheat oven to 425°F and line a baking sheet with aluminum foil.

In a medium saucepan, bring crushed tomatoes to a simmer.

In a medium bowl add ground beef or turkey, onion, garlic, egg, parsley, and pepper. Mix until all ingredients are combined.

Shape the meat mixture into balls (about 24 meatballs).

Arrange meatballs on prepared baking tray, place in oven, and bake for 12-15 minutes or until cooked through (it should read 160°F for ground beef and 165°F for ground turkey).

Add cooked meatballs to the warmed tomato sauce.

Serve meatballs and sauce over English muffins.
