Mixed Vegetables w/ Eggs

Ingredients

  • 1 small bag frozen mixed vegetables
  • 6 scallions, coursely chopped
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 cup spinach
  • Salt to taste

Directions

In a sauté pan, heat the oil over medium heat.

Add mixed vegetables and sauté until fully thawed and warm.

Add the spinach and cook just until wilted.

In a bowl, beat the eggs lightly and pour over the vegetable mixture.

Sprinkle with scallions.

Cook over medium heat until the eggs have set.
