Common Threads’ Chef Instructors are professional chefs and teachers, trained in Common Threads’ unique curriculum, who teach the students at each of our thirty sites throughout Chicago, as well as in Los Angeles, Miami and Washington, DC. Chef Instructors nurture and mentor our students, while leading them through the prep, cooking, clean-up and, of course, eating of the three hands-on ethnic recipes each week!

Douglas Lammie graduated from the Illinois Institute of Art-Chicago, and spent several years working in some of Chicago’s best restaurants, most notably Aigre Doux under Chef Mohammad Islam and Chef Malika Ameen (Top Chef-Just Pastries). When he is not working with Common Threads, he works at Southport Grocery and Café in the Lakeview neighborhood where he carries out numerous different canning projects including jams, preserves and numerous pickled vegetables, to name a few, which are sold in-house for their grocery section. He also holds a B.S. in Nutrition and Dietetics from Dominican University and is anticipating an accredited internship from the American Dietetic Association for the Fall of 2010 in hopes of becoming a Registered Dietitian in the near future. Douglas loves working with the students of Common Threads not only for their passion and excitement that comes from working in the kitchen, but also because each of the students he works with wants to learn how to eat better and live a healthier lifestyle.
